Excellent soup, as i've found most of chef john's recipes to be. Turned out moist and the glaze was to die. My ham was 5.34 pounds and it took 1 1/2 hours. Didn't have a blow torch, so turned my oven to low broil to caramelize the glaze. I had some beautiful arugula in the fridge, so i added it in as well. Wasn't sure about the creme fraise, but it was a great addition. Have to have some good mississippi cornbread with it. I made this with a half picnic fully cooked ham.
